In the German brewing world, "Kräusen" refers to the intense proliferation of bubbles and foam that forms during the fermentation of a young or "green" beer. And "Aufkräusen" (literally "to jack up") refers to a historical brewing technique in which a small amount of green beer is added to a fully matured pilsner. This is a very old and typically German tradition, and today even English-speaking brewers call this technique "krausening." Krausening brings the lively freshness of young beer to the more refined, austere flavors of a fully mature pilsner.
