We used a purified capsaicin elixir to perfectly calibrate the heat. Capsaicin is the active compound in chili peppers that gives them their characteristic spiciness. Scientifically known as 8-methyl-N-vanillyl-6-nonenamide, it is primarily responsible for the heat of hot peppers. Capsaicin has several medicinal properties, including its use in pain relief creams, as it breaks down substance P, a neurotransmitter that sends pain signals to the brain.
Then there's the SUPER SPECIAL cacao from Jamaica: a dark profile; a heavy chocolate base with light biscuit and dark fruit notes, followed by spicy, earthy, green, and oaky notes.
This is all so serious. We've toned it down a bit with marshmallows and Mexican vanilla. Dark muscovado sugar adds depth to the cocoa and helps carry the spiciness.
