Spontaneously fermented cherry mead, aged for 11 months in an old XO cognac barrel.
The texture change brought about by the oak aging creates a surprisingly soft and silky mouthfeel. The cognac-soaked oak adds notes of wood, violets, roses, and cinnamon, along with winey notes of dried grapes and dates to the bright and fresh cherry mead.

Spontaneously fermented and terroir-driven cherry mead, made with Stevnsbær. No added water or yeast (fermented exclusively with the yeast and bacteria naturally present on the cherries). The product was made in several small batches, produced using various techniques, and later blended in carefully considered proportions based on flavor, bringing out the best of all the "band players":
For this vintage, the main blend underwent a normal spontaneous maceration with 11 days of skin contact, before only the juice from the free run was collected (no pressing). This was blended with two other smaller blends: an extended maceration (60 days of skin contact) and a semi-carbonic maceration. Two of these, respectively, provide a deeper tannin structure and complexity, and a very lively, fresh, and perfumed cherry character.
