Cantillon Cuvee Saint-Gilloise 2025 | Lambic

A new brew, brewed by Jean Van Roy in honor of the local football team Union St. Gilles' 2003-2004 Division III title and promotion to Division II.

Cuvée des Champions isn't a traditional gueuze, as it's made exclusively from two-year-old lambic from 2001, not a blend of older and younger lambics. It's also dry-hopped for three weeks in barrels with fresh Styrian Goldings hops. Referral fermentation in the bottle occurs through the addition of a small amount of candy sugar.
