For this small blend of Cognac Gueuze, we blended three lambics that have matured for over twenty months in Cognac barrels. The lambics come from five different breweries, over 60% of which were brewed with local grains from the Pajottenland region. Since most of the lambics were brewed in 2020, the weighted average aging time for this blend is over 46 months. The barrels come from a small, independent Cognac distillery in the Charente region of France, known for its focus on terroir and absolute quality.
