For this Armagnac gueuze, we blended lambics from two small Armagnac casks from Domaine Laballe, a nano-Armagnac distillery in Paerleboscq, France. We aged two-and-a-half-year-old lambics for another nineteen months before blending them with young lambics. The weighted average age of the blend is 36 months. All four lambics used in this blend were brewed with grains from Pajottenland.
