We've been fortunate enough to be friends with Colin and Vik Stronge for many years through various team members here at Polly's. From being part of the legendary original brewing team at Marble, through our own Lally's association with Magic Rock before joining Polly's, to this day, we've always maintained a strong friendship with one of the OG craft brewers. When we heard they were venturing into the unknown and launching their own brewery, we couldn't help but invite them to participate in our annual seventh-anniversary releases to shine a spotlight on their emerging brewery. There was no cutting corners on either side during the planning process for this beer—an imperial stout was discussed and decided upon quite early on, and we think the strengths of both breweries shine through in this incredible beer. Let the malt do the work; we've added—take a deep breath—chocolate malt, ground chocolate, brown malt, ground DRC, crystal dark, black malt, and amber malt alongside our usual base of pale and wheat malts, bringing this beer's bill to over a tonne, delivering all the intense flavor we need. Offset by a spicy addition of Simcoe for a touch of bitterness, this is a no-nonsense, no-artery-thinning addition—downright impy. Let those roasted coffee, dark chocolate, caramel, and tobacco notes swirl around as we reminisce about the old school!
