Cantillon Gueuze 125 | Gueuze Lambic
We took inspiration from the lambics brewed over a century ago to create a gueuze in honour of Brasserie Cantillon's 125th anniversary. Back then, it was common for brewers to use more unmalted wheat in their brews than the 35% we use today. This Gueuze 125 is a blend of lambic brewed on 27-12-2017 with 50% unmalted wheat and 50% malted barley, bottled on 10-12-2021. Best consumed within 20 years of the bottling date.
125 years ago, bottles didn't have labels like they do now; instead, lambic brewers marked their gueuze bottles with a thick white chalk line. These markings also served to indicate how the bottles were placed during refermentation and maturation at the brewery, and in what position they should be returned once they arrived in a bar or cafe cellar.
Instead of designing a traditional label for our Gueuze 125, we chose to honour our past by hand-painting each bottle with a white stripe.
