During the Industrial Revolution of the 19th century, it was nearly replaced by mass-produced lighter beers. It isn't dried over a beechwood fire as usual, but over an alder wood fire. The alder smoked malt gives the beer a fine, complex smoky flavor, which is less strong and spicy than our classic smoked beer. A high percentage of roasted malt creates a distinct roasted aroma and a dark, almost black color.
